Presented here is the preview of my yet to be formally published Distiller’s Workbook which is a series of exercises for new distillers to perform to learn hard to reach concepts in chemistry & physics. The workbook is also the basis for a new cocktail-centric style of bar room distillation slowly popping up around the world, most notably in London.
The book has made a lot of progress, but I’m still learning so much. The lasting things that need to be tackled before I publish are creating revised methods for standardizing botanical charges by examining essential oil yields and a creating a series of best bets for constructing products like gin & curacao where recipes are written in terms of essential oil content instead of highly variable grams of botanical measurements (This is done in theory and I have recovered all of Seagram’s secret botanical assay procedures from the 1930’s. I have yet to spend the money to build out their lab completely).
